In order to investigate the relationships between the softening of peach fruits and cell wall hydrolases, activities of polygalacturonase, ¥á-galactosidase, ¥â-galactosidase, ¥â-glucosidase, ¥â-xylosidase, ¥â-arabinosidase, and ¥á-mannosidase were measured during the fruit softening of a fast softening cultvar, ¢¥Mibaekdo¢¥ and a slow softening cultivar, ¢¥Yumyung¢¥. Activities of soluble and cell wall-bound polygalacturonase were similar between two cultivars. In both cultivars, activities of soluble and cell wall-bound ¥á-galactosidase, ¥â-galactosidase, ¥â-arabinosidase, and ¥á-mannosidase were maintained high, while those of ¥â-glucosidase and ¥â-xylosidase were low during the softening processes. Activities of soluble ¥á-galactosidase, ¥â-arabinosidase, and ¥á-mannosidase of ¢¥Yumyung¢¥ were higher, while activities of cell wallbound ¥á-galactosidase and ¥â-arabinosidase were lower than those of ¢¥Mibaekdo¢¥ peach throughout the softening processes. The activity of cell wall-bound ¥á-mannosidase was similar between two cultivars. Activities of soluble and cell wall-bound ¥â-galactosidase of a fast softening cultivar, ¢¥Mibaekdo¢¥ were higher than those of a slow softening cultivar, ¢¥Yumyung¢¥.
